Roti Canai Ham & Cheese Roll

Remember my post about the Roti Canai Hot Dog Roll and Roti Canai Chicken Puff? Well today, I am going to make another really simple and quick recipe using frozen roti canai. This time around, I'm making Roti Canai Ham & Cheese Rolls.
Start off by taking out a piece of frozen roti canai from the freezer and allowing it to thaw on the kitchen counter for about 5-10 mins. Remember not to over thaw. We just need it to be pliable. If you overthaw the frozen roti canai, it will be very sticky, thus making it really hard to work with.
Next, brush on some egg wash onto the roti canai. If you notice, the first few steps in this recipe is exactly the same as the roti canai hot dog recipe.
Then, place a large piece of ham (you can use two or three pieces if your ham is really small) and one stick of mozzarella string cheese onto the roti canai.
Roll the roti canai up and tuck in the sides. Make sure that everything is nicely tucked in. If not, the cheese will ooze out when it melts. Once you have rolled it up nicely, you can then place it onto a greased baking tray. Remember to cut some slits on the top of the rolls. This is to allow steam to escape while baking.
After cutting the slits on the top of the rolls, brush on some egg wash. The egg wash will give the rolls a nice golden brown color when it's done baking.
Pop it in a 350F preheated oven for about 45 minutes. Once it's done, allow it to cool down for a while before serving.
There you go! A yummy looking piece of roti canai ham and cheese roll. You can cut it to half before serving. It's just perfect for an afternoon snack or something to munch on while watching TV. Not only are they really simple to make, but they are really yummy to eat!

The Loaf - Telaga Harbour Park, Langkawi

After the Oriental Village, we headed towards Pantai Kok to check out Telaga Harbour Park. Langkawi is well known as a major sailing and yachting destination, so it is no suprise that many marinas can be found all over the island. However, Telaga Harbour is one of the more popular ones and is said to be the most beautiful. From the moment we got there, I can see the reason why. The whole marina is landscaped and designed to resemble a Mediterranean-style harbour town of the French Riviera, with beautiful luxury yachts docked at the harbour. For a split second, I forgot that I was actually in Malaysia! Of course, the amazing view of the Andaman Sea as well as the Mt Matchingcang range reminded me that yes, we are still in Langkawi :D
Perdana Quay is the place to go if you are looking to wine and dine in Telaga Harbour Park. There are many restaurants (mostly high end ones) for you to choose from. Since we were there in the afternoon, there wasn't much activity going on. I can just imagine how it will be like when the sun goes down. With awesome views of the Andaman Sea, you can choose to dine al fresco or inside. I can't remember exactly all the restaurants that is there but I know that there is a Russian (Restaurant USSR), Seafood (Pulau Pulau Seafood) and Italian (Mare Blue) restaurant. Of course, the famous Loaf Bakery & Bistro is also located at Perdana Quay.
I have heard so much about The Loaf that we just had to go check it out. Opened in 2006, this is the original branch of The Loaf (there is now a branch in Pavillion, KL too). Owned by Malaysia's 4th Prime Minister Tun Dr Mahathir, The Loaf is well known for it's bread and pastries that are baked using traditional Japanese techniques.
Check out the almost full basket of pastries that we picked out (RM4 - RM7 a piece)! I must say that they don't come cheap but they sure taste awesome :P Apart from it being a bakery, The Loaf is also a dine in cafe with a full ala carte menu. If you are ever around the area during breakfast, it is said that you have to try Tun Dr Mahathir's favorite breakfast set (RM22). It consist of a bowl of fragrant mutton curry, two soft boiled eggs and chunky toasted bread. Sounds good to me!

Another 'must have' when you are at The Loaf are their Mini Uhu! Uh!s. Mini what??? What's that? :P Well, let's just say they are little cups of heaven! They are tiny cup cake size cheese cakes, available in many different flavors. I believe there are 20 flavors in total, some with wacky names like Coco Loco and Glitzy Strawberries. There are also some 'Malaysianized' flavors like Splendid Kaya, Refreshing Longan, Enticing Rouge (air bandung) and of course, Durian Obsession. These tiny cheese cakes don't come cheap though. A single cup cost RM3.20, 1/2 a dozen is RM16.50 and a dozen will set you back RM31.90! I guess it's worth it if you are a big cheese cake fan :D I'm glad we stopped by The Loaf to pick up some snacks. The pastries were yummy and even though it's a little bit on the expensive side, I think it's well worth it. Maybe we should have brunch there the next time we are in Langkawi!

Cheesy Pepperoni Ring

I found this simple yet yummy recipe not too long ago. It's perfect to serve up when you have friends over for the game, something to munch on when you watch TV or as snack when the kids come home from school. The best thing is, it's so easy and quick to make! Here's how you make it :D
You start off by rolling out a can of Pillsbury Crescent Creations onto your work area. You could also use the regular crescent dough, you just have to pinch all the seams together to make it into a single dough sheet.
Brush on some melted butter onto the dough sheet.
Sprinkle on some garlic salt, Italian seasoning and some shredded Mozzarella cheese.
Next, place some pepperoni slices on top of the cheese. You could replace the pepperoni slices with sausage, ham, chicken...pretty much anything that you like.
Carefully roll up the dough. Make sure you roll it up tight and there are not many air pockets. Also, make sure that you seal the ends of the roll. Then, set it aside.
Now, spray on some non stick cooking oil onto a baking sheet. Then, sprinkle on some corn meal. You do not need corn meal if you do not have it at hand. It just helps to further prevent the pepperoni ring from sticking to the baking sheet.
Take the roll from your work area and place it onto the baking sheet. Join the two ends together, forming it into a ring.
Then, brush on some melted butter. This will give it a nice golden brown color once it's baked.
Sprinkle on some Parmesan cheese and some shredded Mozzarella cheese.
Pop it in a 400F oven for about 20-30 minutes (baking time varies depending on oven) and it's done!

Roti Canai Chicken Puff

Since I posted my Roti Canai Hot Dog Rolls recipe back in April, many people have commented that that they really liked the recipe and that it was very simple to make =) Based on that recipe, I came up with another frozen Roti Canai recipe. This time, I'm gonna make some Roti Canai Chicken Puff.
It's also really simple to make and yummy to eat. First, we need to make the filling. You can use some leftover roast chicken or you can boil/steam some chicken breast or thighs. Then, shred it up to tiny pieces.

Add in a few dollops of mayo and mix it with the chicken. Crack in some black pepper and you can add in some parsley and thyme, if you like.

Next, add in some raisins. If you do not like raisin, you can even add in some chopped apples or just leave out this step completely. It's up to you. Mix everything together and set it aside.

Remove the frozen roti canai from the freezer and allow it to thaw for a few minutes. Remember, do not over thaw. The dough will become too sticky and really hard to work with if you over thaw. Cut the roti canai to half.

Pull off the top plastic layer from the roti and brush on some egg wash.

Put the chicken filling on one side of the roti (just like the picture).

Flip over the dough to cover the chicken. Remove the bottom plastic layer and place the chicken puff on a greased baking sheet. Using a fork, seal the sides of the puff.

Brush some more egg wash on top of each puff. This is to give it a nice golden brown color when it's done.

Pop the chicken puffs into a 350F oven for about 35 minutes or until it turns golden brown.

There you go, it's done! Wasn't that easy? Allow it to cool for about 5 minutes before serving. You should try it, it's really good! =)
