Stuffed Rigatoni with Spicy Italian Sausage

I saw some frozen stuffed rigatoni on sale in the grocery store a while ago and decided to give it a try. Since I still had some spicy Italian sausage sitting in my freezer at home, I figured it would make a simple and quick dinner.

This is what you need to make a really quick stuffed rigatoni meal. Some frozen stuffed rigatoni, Italian sausage, diced tomatoes, an onion, garlic, meat sauce, Italian herbs and some Parmesan cheese.

Firstly, remove the casing from the spicy Italian sausage. Just make a cut in the middle of the sausage and peel off the casing. Of course if you are using bulk sausage, then you can skip this step.

Divide the sausages into tiny little meatballs.

Fill a pot with water and a little bit of oil. Once it goes to a boil, add in the frozen stuffed rigatoni. Allow it to cook for about 5 minutes or so. You know that it's done when it floats up.

Drain the stuffed rigatoni and set it aside.

Now let's start working on the sauce. Saute some garlic and onions in a pan.

Add in the spicy sausage meatballs.

Once they are browned, add in the diced tomatoes. Remember to drain it well before adding it into the pan.

Mix everything together and let it simmer. Sprinkle in some Italian seasoning.

Add in a can of meat sauce. Cook everything together until it goes to a boil.

Turn off the heat and add in the stuffed rigatoni. Toss the rigatoni in the spicy Italian sauce and it's ready to be served! I would usually sprinkle on some parsley and Parmesan cheese before serving.

Mmmm mmmm mmmm. It's so easy to make and extra yummy to eat. It took me just about half an hour to make it. I just love how all the different taste and texture just comes together. The creamy taste of the ricotta cheese, the spicy sausage, tangy tomatoes...mmm, it's good :D
